Setting up VLC to stream video to a file
It's probably documented in the Help, but here's my way of doing it.
Open VLC Player
The VLC Controller window opens. Then click the Playlist icon (blue) to open/close it.

Drop these links in the window (you know how to save files, do you):
Nosjournaal.m3u (24 hour National News)
TweedeKamer.asf (Dutch Parliament)
Double-click either one.
A video-window opens and in the playlist the first mms: link is selected.

To start recording the stream, choose Streaming/Exporting Wizard… (Cmd-Shift-W) in the File-menu.

Click Transcode/Save to file and click Volgende (=Next).

Select a line in the existing playlist and click Volgende (=Next).

Check Transcodeer video and audio. Choose h.264 for video and MPEG 4 audio for audio and click Volgende (=Next).

Click Volgende (=Next).

Choose a location to save the stream and check Local playback to see what is recorded. Click Volgende (=Next).

The summary of what is configured. Click Finish.

VLC is now recording the stream.
To stop recording click the Stop button (the square icon). The movie will now be permanently saved. You can open the file in any movie editor for further editing.

And here's the result:
This is the basic set-up. Some you can skip. You can configure the Streaming Wizard if you know the URL to the stream. Instead of choosing from the playlist, type the URL at Select a stream in the Input window.
